Our Porthilly Rock oysters, from the Cornish oyster farm of the same name, are sent to us in the early hours by Flying Fish Seafood. They are farmed in the clean sandy waters of the Camel Estuary in Cornwall and have a good ratio of salinity and freshwater from the river. Their flavour profile is creamy and buttery with a clean fresh cucumber finish.  This is an oyster with a delicate nose and a lasting finish.

Porthilly Oyster Farm produces a year-round supply of beautiful Rock oysters. The shells have a lovely clean deep cup, and a distinctive zebra stripe patterning. Tim Marshall and his son Luke farm oysters and mussels whilst the rest of the family concentrate on the dairy herd. They are 5th generation to farm on both the land and sea in this stunning area of Cornwall.

We are very proud to have them on our menu and like to serve them raw with a squeeze of lemon and some shallot vinegar or with a dash of Tabasco sauce for a kick. They are perfect as a light starter for one or a dozen shared on a spring evening with a glass of Three Choirs white wine and a great view.
